As said, I made one with two normal assemblies, connecting them with a steel bar. I cut off the extra steel from the right hand side. This had no problem going behind the heater.
Since mine is an automatic, I also eliminated the clutch pedal.

Minis should be RHD! As far as drive-thrus are concerned, is your car so wide you can't lean across the passenger seat to conduct business? Even as fat as I am I can still reach across and use drive-thrus. Likewise, Minis are small enough to lean over in if you want to pass someone.

Or you could fabricate your own from two pedal boxes and some tube as Richard on the board did here a while back with his pick up.
Better still keep it RHD as the LHD position is awkward and uncomfortable (to me anyway).
